How To Make Mermaid Toast, The Internet’s Most Magical Healthy Food Trend

Forget unicorn frappuccinos, we're loving this ocean inspired breakfast...

Eating healthily is great for your body and mind, but sticking to avocado toast and overnight oats every morning can sometimes get, well, a little dull.

Enter mermaid toast.

The amazing food stylist Adeline Waugh invented this trend after noticing the amazing way that different vegetable extracts dyed her food vibrant colours one day. After playing around with different ingredients, she found a way to turn her morning toast into a magical ocean painting, while still keeping it’s nutritional value.

“My goal is to take healthy food and make it fun and exciting” Waugh told Vogue Magazine. “Brightening it up with a few (or many) pops of color.”

Food with all the whimsy of Starbuck’s new unicorn frappuccino, but wth none of the chemicals or sugar? We’re totally sold. What’s even better is that mermaid toast is incredibly simple to make, as you can see in the recipe below…


What you need:

  • Cream cheese (regular or almond milk cream cheese will work fine)
  • Spirulina powder
  • Chlorphyll drops
  • A piece of toasted bread
  • A butter knife

“Add very small amounts of chlorphyll and spirulina to the cream cheese, mix it together and see what the color ends up looking like” says Waugh on her blog post.

“If I want a deeper or more pigmented color, I add a little more, bit by bit, until I have the color I desire. I add a base of plain white cream cheese first, and then I start swiping the different blues and greens on in a motion mimicking waves.”

“You don’t have to do it exactly like I do, just have fun with it!”

Yes, it’s all a bit silly and making your toast look like it belong to a mermaid doesn’t actually change anything about the way it tastes, but it’s so much fun to get a bit creative every now and again.
