Health Kicks: Beetroot Power

Try out this yummy healthy salad by Rachel Love whenever you feel out of power and in the need for a little energy boost – like we do most of these grey autumn days…

Spicy beetroot, squash & and feta salad (serves 4):

Beetroot is packed with iron, essential for energy and vitality whilst squash and spinach is full of vitamin C to help prevent those winter colds. Pack in some protein rich feta, omega rich seeds and a pinch of cayenne to speed up your metabolism and you’re onto a killer feast.

What you need:
* 2 large handfuls of spinach leaves
* 1 butternut squash, cubed
* 2 medium beetroots, cubed
* 1/2 a pack of feta, crumbled
* 4 cloves of garlic
* 1/2 tsp Cayenne pepper
* small handful of mixed seeds
* juice of one lemon
* extra virgin Olive oil

Put the squash, beetroot and garlic in an oven dish, sprinkle with cayenne, salt & pepper and roast at 200C for 40mins.
Once roasted, toss the warm veg with the remaining ingredients and serve.
