Winter Mood Booster (serves 4)

Turkey is for life, not just for Christmas! And it’s also rich in the amino acid tryptophan, which the body converts to serotonin, the happy hormone, wiping away those winter blues. Add some avocado and butter beans for magnesium and potassium to help relieve tension and relax tired muscles.

What you need:
* 400-600g Turkey breast, whole or diced
* 1 packet of rocket
* 1 box of cherry tomatoes
* 6 spring onions, chopped
* 1 can of butter beans, drained
* 1 avocado
* 1 handful of fresh herbs, chopped (coriander and basil work well)

Dressing:
* 1 clove of garlic, crushed
* juice of one lemon
* 1 tsp Dijon mustard
* 50 ml Olive oil (extra virgin)
* salt and pepper

How To:
Toss the beans, herbs, onions, avocado and salad dressing together – leave to stand while you roast the turkey and tomatoes for 25 mins at 200C. Once cooked, add the tomatoes and shredded turkey to the bean mix. Serve warm on a bed of rocket.
