Super summery salad (serves 4)
Early summer is perfect for living foods packed full of phyto-nutrients (plant nutrients), that grow easily on your window-sill in just a few days. As well as being delicious and colourful, sprouts provide the highest amount of vitamins, minerals and enzymes of any food per calorie unit and are in a form that is easy to digest and absorb by the body. Add in some omega rich oily fish and seeds and you have yourself a super nutrient charged salad.
What you need:
*4 flaked peppered smoked mackerel fillets
*8 thinly sliced radishes
*1 head broccoli, cut into florets, then blanched and refreshed under cold running water
*2 tbsp sunflower and pumpkin seeds
*A good handful sprouts (such as alfalfa and purple radish)
Dressing
*4 tbsp extra virgin olive oil
*juice of one lemon
*garlic clove, crushed
*1 tbsp tahini
*Sea salt and pepper
In a large bowl, mix together mackerel fillets, radishes, broccoli, seeds and sprouts. Mix dressing ingredients together in a jar and pour over to serve.
