Pizza
Homemade pizza may not be the prettiest, or the easiest to eat, but damn, it tastes good, and the best thing is that you can have as many toppings as you like!
You Will Need:
White bread flour
7g yeast sachet
Olive oil
A little bit of sugar
A tube or can of tomato puree
A small jar of red pesto (tomato and olive is our favourite!)
2 balls of mozzarella
Any toppings you like, which can include but aren’t limited to: pineapple, ham, tuna, artichokes,
bacon, chicken, mushrooms, sundried tomatoes, olives, asparagus, caramelised onion, meatballs,
pepperoni and the list goes on…
To make the dough…
Use about a third of a bag of white bread flour, this will make a large pizza base, and add a few pinches of salt.
Mix a 7g sachet of yeast with about 1/3 of a pint of warm water, a little bit of sugar and a few glugs of olive oil. Then make a well in the centre of the flour and pour in the yeast and water mixture, stirring everything together with a fork (you may need to add some more water as you go).
Once it starts coming together, knead the dough for a while with your hands, then cover it up and leave it to rise for 30 minutes to an hour.
To make the base…
The key to making the tomato sauce for the base is to not make it too wet, as this will make your pizza soggy, but you also want it to taste good.
The best and simplest way to do this is to mix a small jar of red pesto with a tube or can of tomato puree and a little salt and pepper to make a nice thick sauce. You can make this and get your toppings ready while the dough is rising.
To put everything together…
Pre-heat your oven to about 200-220 degrees, depending on your oven (pizzas need to be cooked on a high heat to stop them getting soggy).
Once the dough has risen, knead it again for about five minutes to knock all the air out, then cover a clean work surface with four and roll the dough into a rough circular shape. Try to get it as thin as possible because it will rise in the oven.
Once your dough is rolled, place it on a sheet of baking paper and transfer it to an oven tray, then bake it in the oven for a few minutes, this will help stop the sauce from soaking into it in the oven. If it starts to rise, take it out straight away and push the extra air out with your hands.
Now your dough will be semi cooked, and you can add the toppings! Spread your base sauce over the dough using a spoon or ladle, then go crazy and add your chosen toppings, whether you put the mozzarella on top or underneath your toppings is personal preference.
Once you’re satisfied with your pizza, put it on the top shelf of the oven and cook for five to ten minutes, or until the cheese has melted and the crust is starting to turn golden brown.
