Chips
Homemade chips are the best, they are the perfect snack or accompaniment to a meal, and can be prepared a few hours before you want to cook them.
You can oven cook them so they are nice and healthy or double deep fry them to make them extra yummy. And you can reuse the oil to give your future chips a better flavour.
You will need:
Potatoes – Maris Piper are the best for making chips but it’s not super important.
Sunflower oil
Double Deep Fried Chips
Cut your potatoes into chip shapes, leave them quite thick so that they don’t disintegrate when you fry them. You can leave the skin on, or peel them if you have time.
Put them in a colander and give them a wash, and pat them dry with a clean tea towel.
Fill a deep pan to about half way with sunflower oil and heat it on a low to medium heat until the oil is hot (be very careful with the hot oil!).
Add your chips in batches so they aren’t overcrowded in the pan and cook them for about ten minutes, until they are cooked and soft but not starting to brown.
Take them out with a metal slotted spoon or something similar (don’t use plastic, it will melt in the hot oil) and put them in a bowl lined with kitchen paper to soak up any excess oil and leave them to cool.
Don’t leave them on the paper towels for too long or they will stick to it!
Now the chips can be left for a few hours, or re-fried straight away. This time heat the oil on a medium to high heat and cook the chips for about five minutes, until they are crispy and golden brown.
When you’ve removed them from the oil, drain them on some paper towels again, then season with salt and pepper and get munching!
Yummy Oven Chips
Pre-heat your oven to 180-200 degrees. As before, cut your potatoes into chip shapes, peel them if you like and give them a quick wash.
Then lay them out on an oven tray, on a sheet of baking paper if you don’t have a non-stick tray. Make sure they’re not too crowded or they will not cook evenly.
Drizzle on some olive oil and salt and toss everything together so that the chips are evenly covered, then cook for about 45 minutes, until the chips are browning and crispy.
Check on them occasionally and turn them over so that the brown on all sides.
Once they’re out of the oven you can enjoy them as they are, or toss them in some Cajun seasoning and mixed herbs for a bit of extra flavour.
