Falafel
There are many different ways to enjoy falafel, the greasy burger of the vegetarian variety… in a wrap, in a salad, in a pitta bread, as a burger or with cous cous. The possibilities are endless!
Again, this is a very basic recipe but once you have it down you can start adding extra ingredients, such as grated carrot or beetroot, sweetcorn and mushroom.
You will need…
A 200g can of chickpeas
1 small onion
1 clove of garlic
Ground cumin
Paprika
Ground Chilli
Mixed herbs
1 egg
Plain flour
How To Make
Finely chop the onion and crush the garlic and fry in some olive oil for five minutes. When the onion is transparent, add it to a bowl with the chickpeas and egg.
Add generous amounts of the herbs and spices and mix together, then use a potato masher or a fork to mash up the chickpeas.
This is quite a lengthy process so it’s a bit easier to start with your hands and then move on to the fork or potato masher. You can also use a food processor.
If you falafel mix seems a bit wet, you can add a little flour to pack it out a bit.
Once everything is nicely mixed together, mould your falafel mix into mini burger shapes, about a fingers’ width thick – you can go for about 4 big ones or lots of little ones.
Then fry them in some oil for about three to four minutes on each side, until they are brown and crispy on the outside.
